Stan has already identified your prints, however you ask about the mounting and how you can be certain that they are legitimate woodblock prints.
With regard to the mounting, your prints are in a hostile environment and need to be removed from that as soon as possible. In your photo, it is clear that the cut edge of the mat board has turned brown. It was originally white. This is indicative of acidic paper being in the core of your mat board. That acidity has probably already leached into the body of the prints and created a "mat line" of toning damage. This will get worse over time.
Once you have removed those prints from their mountings, and if (hopefully) they haven't been glued completely down to their backing, you will be able to examine the reverse side of the print paper. If these are legitimate woodblock prints, which they almost certainly are, you will be able to observe color bleed through on the reverse side, along with possible rubbing marks from the printing process.
